Place the sweet potato pieces and drained chickpeas on a large tray and add a drizzle of olive oil and a pinch of salt. Mix well and cook for 35-40 minutes until the sweet potato is tender.<br \/>\r\nWhile the sweet potato cooks, cook the quinoa, place a large pan over medium heat and add a drizzle of olive oil.<br \/>\r\nOnce hot, add the almonds, cook for 5 minutes. Mix everything together.<br \/>\r\nAt this point, add the cooked quinoa to the pan, along with the sweet potato, chickpeas, lemon juice and almond butter. Mix well until everything is covered in the sauce.
